 Whiskey

Whiskey is a type of distilled alcoholic beverage made up of fermented grain mash. Various grains are used to different varieties such as corn, barley, rye and wheat . Whiskey is aged typically in wooden casks , which are often old sherry cask.

Production of whiskey 

1) Malting 

Best quality barley is steeped in water and then spread out on malting floor to germinate .
During this process Enzymes are activated which convert starch into sugar when mashing take place .

2) Mashing 

The dried malt is ground into coarse flour or grist , which is mixed in hot water tun . After mashing sweet and sugary liquid is called wort .

3) Fermentation 

The wort is cooled to 20°c and pumped into washbacks, where yeast is added and fermentation begins. Carbon dioxide starts preparing in this stage . After about 2 days fermentation dies down and the wash contains 6-8% alcohol by volume. 

4) pot still

In distillation , still is heated just below the boiling point of water and the alcohol and other components vapourise and pass over the neck of the still into either a condenser or a worm .

5) Distillation 

In this process the solution goes under the double distillation process. First in the wash still to separate the alcohol from the water 
, Yeast and residue called pot ale . After this the liquid has alcohol percentage of 20% ABV , then thus goes to the second distillation in this the process gets repeated and the alcohol percentage of the liquid increases gradually to 68% alcohol by volume. 

6) Aging 

After the distillation the whiskey is sent to be aged in the barrels , barrels and the time of aging the whiskey depends on the manufacturer . That which kind of whiskey are they preparing.
