Tea
Tea is an aromatic beverage made by pouring hot or warm water over cured or fresh leaves of camellia seinesis an evergreen shurb of native of china and Asia.
History
Tea is orignated in china . History behind tea is there was a king in the china he went in the war with his warriors with food and their horses. One night they were resting in the forest and boiling some water to drink and then a leaf of camellia seinesis fell on the boiling water , the king drank it and found it really good and that's how tea is orignated . After that the has moved all over the world and drinked in different different styles.
Preparation
Tea leaves are harvested from the field and then transferred into tea plant for further process.
Tea leaves are gernally picked from hands and collected in the basket and then sent in the factory .
1. Withering
Tea leaves are collected and sent to tea plant . Gernally tea leaves have 75% of moisture which is reduced to 45% . In this process tea leaves are left in the porferted strains where they get in the contact of heat to reduce the moisture content. During drying process leaves are kept in cool air for 8 to 18 hours. So that they get ready for next process of rolling.
2. Rolling
Once leaves are withered , they are rolled in order to promote oxidation. As the withered leaves rolled , internal structure cells are broken down, to release essential oils that react with oxygen for flavour and aroma.
3. Oxidation
After the rolling leaves they undergoes the process of oxidation called fermentation , which determines the strength and flavor of tea .
4. Drying
To stop the oxidation process , tea leaves are subject to drying . Tea leaves are dried by pan-frying , sun drying or baking. This process leaves the moisture about 2-3% .
5. CTC method
Ctc method known as crush - tear - curl method . As the name suggests in this process tea leaves are crushed , teared and curled . In this process tea leaves goes in the machine where it is teared into small pieces so that it can be packed into tea bags .
6. Packing
It is the final process in which processed tea leaves are packed into the tea bags and shipped all over the world.
