Tequila
Tequila is an alcoholic beverage which is made up from agave plant , it is basically distilled spirit. This liquor can only be produced in designated area of mexico.
Five most common types of tequila
* Plata( un-aged Blanco or silver)
* Joven( un-aged Blanco tequila that's blended with Añejo or golden colouring)
* Reposado( aged in wood barrel for upto one years )
* Añejo( aged in wood barrels for one to three years)
* Extra Añejo( aged in wood barrels for at least three years)
Production of tequila
1) picking of agave :-
At first Agave is picked from ground and cleaned and sent for next process.
2) shredding the Agave:-
By shredding the agave pine through three separate shredding processes, the agave fibers are prepare for sugar extraction.
3) Extraction :-
A diffuser extracts the sugar within the shredded agave fibers . Agave juice is then obtained from solution .
4) cooking :-
Agave contain complex sugars , like inulin ,that must be transformed into fermentable sugars through a hydrolysis process.
5) Fermentation :-
Anaerobic fermentation is carried out in stainless steel tanks using blend of yeast and nutrients . Each round ferments for 24-25 hours with varying temperatures.
6 ) Distillation :-
The first distillation process takes place is stainless steel distillation columns, during which water is removed and alcohol is concentrated from fermented agave juice . The second distillation takes place in still to obtain tequila with a range of 55-65% alcohol.
7) Filtration :-
Every tequila is filtered using slightly different methods . Carbon filters are used to filter tequila.
8) Aging :-
Aging of tequila varies from tequila to tequila . Some tequilas are aged 2 months while other tequilas are aged at least 12 months and some aged for at least 36 months .
9) Botteling:-
Tequila are then bottled for final step.
